Potato-Cauliflower Latkes
Makes approx 15 2-inch pancakes
1 ½ cups fresh cauliflower-cut up
1 ½ cups mashed potato, about 2 Idahos
2 large potatoes, grated
4 tbsp matzo meal
2 tsp garlic-minced
1 medium onion, chopped
1 egg
1 tsp salt
¼ tsp pepper
Oil for frying

Oil for frying
Steam the cauliflower until very soft and set aside.
Heat 1 tbsp. oil in a sauté pan and fry the onion until lightly browned then add garlic and cook for an additional minute. Set aside.
In a large bowl first mash the cauliflower then mix with the mashed potatoes.
Add the onion mixture, matzo meal, egg, salt and pepper.
Make 2-inch pancakes and coat each one in the grated potatoes.
Heat 1 inch of oil in a frying pan until hot and fry each side until crisp.
